2024 Josef Chromy Sauvignon Blanc
Colour: Pale lemon-green
Aroma: Typical varietal aromas of gooseberry, Jalapeño chilli pepper, fresh garden peas and wasabi are supported by a core of zesty citrus fruit.
Palate: The wine is dry, mineral driven and has a chalky texture. It is filled with juicy citrus fruit flavours of lemon, lime and grapefruit; as well as white stone fruit. The palate is extended by the racy acidity, creating tension and vibrancy.
Grapes: 100% Sauvignon Blanc from the Tamar Valley and the east coast of Tasmania
Winemaking: Sauvignon Blanc grapes were picked at optimal ripeness and flavour development from early to late March 2024.
The grapes were promptly pressed under dry ice cover, with only the free run juice retained and clarified to maximise the wine’s aromatic potential and purity. The cool fermentation lasted approximately two weeks and was monitored daily. Clear wine was racked from its lees and left to mature in tank for several months prior to blending and bottling.
Cellaring Potential: Best consumed now to 2027
Serving: Salads packed with herbs and greens like Tabbouleh, “Moules Marinieres”, spring vegetable risotto or goat cheese.
