2023 Josef Chromy Rose
Colour: Medium salmon with a pink hue
Aroma: Intense floral notes of lavender, orange blossom and bath salts. The nose opens to reveal an abundance of red fruit such as raspberries and early summer strawberries, alongside nectarine, ruby grapefruit and blood orange.
Palate: The wine is juicy and moreish. Flavours of sour cherry, raspberry and nectarine are supported by refreshing acidity and a savoury, briny finish. The wine has a good texture, silky tannins and a lovely phenolic grip – a true “gastro wine”!
Grapes: Pinot Noir with a small amount of Riesling
Winemaking: Pinot Noir grapes from Block 22 were picked in late March at optimal ripeness for Rose’ production, destemmed, and allowed to rest on the skins for a few hours until desired colour pick up was achieved.
The must was then transferred into the press, where the free-flowing juice (the “free run”) was separated from the harder pressings. Using only the free run portion in the production of this Rose’, allows us to keep the phenolics (bitter/astringent flavours) in check and to maximise fruit purity and aromatic expression.
The free run juice was clarified before a cool alcoholic fermentation kicked off. A small percentage inclusion of Riesling was carried out post fermentation for added freshness and citrusy drive.
The resulting wine was left in tank for a short maturation on lees to build body and texture. It was then gently fined, filtered and bottled in August 2023.
Cellaring: To enjoy this wine in its peak freshness drink now until 2026
Serving: Serve with grilled fish and an array of Mediterranean inspired salads
Technical: pH 3.2 / TA 8.14 / Alc. 13.5%
