2019 Josef Chromy Brut Finesse
Grape Variety: 70% Pinot Noir / 30% Chardonnay grown on our Relbia estate vineyard in northern Tasmania

Colour: Pale straw
Aroma: Elegant and complex. Layers of mineral notes, sea spray and oyster shell alongside poached pear and quince fruit. Extended aging on yeast lees derived aromas such as fresh sourdough, marzipan, brioche and toasted pine nuts.
Palate: Focused and savoury. There is a distinct saline, briny note cutting through the rich palate balanced by fine tension and chalky texture. The finish is long and precise with refreshing juicy citrus flavours. Brut Finesse 2019 is a wine of finesse, complexity and elegance.
Winemaking: Our vintage sparkling wines aim to showcase the pinnacle of our sparkling fruit as well as the essence of the specific year and season in which they are made.
Following the traditional method, each variety is picked separately at optimal conditions, whole-bunch pressed and fermented slowly at cool temperatures. The resulting wines are left to settle on lees for several months, before being racked-off and combined to form the final vintage blend.
The resulting base wine is then bottled and set off to it’s second fermentation and aging journey, where fine mousse is formed, as well as complexing autolytic characters from long aging on yeast lees.

Cellaring Potential: The wine is very tightly coiled, with the goal of retaining intrinsic, nervy tension and power, allowing for favourable complexity to develop slowly under cork. This wine will reward patience.
Serving Suggestions: Excellent pairing to appetizers like white anchovies, Sicilian olives and prosciutto or richer dishes like fried chicken, grilled seafood or aged Comte cheese.
